2-Week Intensive or 4-Week Comprehensive Training — 80 Hours, One Certification Goal

How can you master the foundations of authentic Japanese cuisine in a way that fits your professional goals and schedule?

At the Japan Culinary Arts Academy (JCAA), our Bronze Certification Training offers a structured, hands-on learning experience designed to help international chefs build a strong foundation in Japanese culinary techniques.

Based on the MAFF framework for authentic Japanese cooking techniques, our training covers a broad range of Japanese culinary fundamentals.

Classes follow the structured teaching approach used in Japanese culinary schools, guided by experienced Japanese instructors who have spent decades teaching professional cooking techniques.

Whether you are an experienced chef looking to refine your skills or a culinary professional seeking a deeper understanding of Washoku, JCAA offers two training options to suit your needs.

TWO WAYS TO LEARN. THE SAME 80 HOURS.

Both programs cover the same Bronze curriculum, with 80 hours of hands-on training and the same tuition fee of USD 6,500.

The difference is how those hours are organized.

BEYOND BRONZE: OPTIONAL RESTAURANT INTERNSHIP TRAINING

7-Week Program

4 Weeks Bronze + 3 Weeks Restaurant Internship

9-Week Program

4 Weeks Bronze + 5 Weeks Restaurant Internship

What makes JCAA Restaurant Internship Training different?

This is not a job-placement service.

JCAA coordinates with restaurants to develop structured training arrangements tailored to each student's learning objectives.

Through this experience, students can deepen their understanding of professional kitchen operations, preparation routines, workflow, and the practical application of Japanese culinary techniques.

This option is particularly valuable for chefs who are planning to open their own Japanese restaurant or expand their existing restaurant business.

YOUR NEXT STEP: SILVER TRAINING

Bronze Certification is more than a foundation in Japanese cuisine. It is also the beginning of your journey toward more advanced culinary training.

After successfully passing the Bronze certification examination, students can progress toward JCAA's Silver Training Program, where they can further develop their understanding of Japanese culinary techniques and traditions.

Upon earning Bronze Certification, students receive a credit valid for one year toward progressing to JCAA's Silver Training Program, subject to the applicable program requirements.
